چکیده
Blueberries originated from North America and the predominant cultivated species are Vaccinium corymbosum (Northern Southern Highbush), ashei (Southern Rabbiteye), angustifolium (Lowbush). Consumer’s demand for high-quality blueberry fruits has driven interest to better understand flavor chemistry of blueberry. Forty-five previously identified aroma contributing compounds were further investigated in 11 varieties, including some developing types. Based on odor activity value, branch-chain esters, terpenes, aldehydes could be primary contributors all varieties. A heatmap with hierarchical clustering dendrogram showed that three varieties ORUS 235-4, 235-3, ORUS-10-1 close together a high level esters and, turn, ‘Draper’ ‘Duke’. However, they differed other ‘Aurora’, ‘Bluecrop’, ‘Elliott’, ‘Legacy’, ‘Liberty,’ ORUS-202-2. One-way ANOVA analysis demonstrated terpenoids varied most among Also, Pearson correlation terpenoids, except eucalyptol, exhibited strong positive correlation, especially between linalool ?-terpineol. Enantiomer revealed S-(+)-linalool was dominant blueberries, whereas S-(?)-?-terpineol slightly higher than R-(+)-?-terpineol. This study provided detailed volatile composition database unraveling complex genetics various aspects assist breeding purposes new crops.

Blueberries are commonly consumed in processed forms, but limited information is available on how different processing methods and storage of processed products impact the polyphenolic content of the fruit. In this study, we determined how canning, puréeing and juicing of blueberries, as well as storage of processed products at 25°C, influenced the retention of chlorogenic acid, total flavonols...
